This fish fry looks so good, you’ll want to slap your mama. Better not do that, but you will want to try this recipe for fresh fried speckled trout or any other fish you may catch in Louisiana’s fertile waters.

Nothing compares to a day of trout fishing with your buddies. On my last outing, we caught trout on corks, jigs and just about anything we tried. It didn’t matter what lures you used; they were just biting. The next best thing is to fillet them up, get them fried and enjoy a feast with friends from the dock and your fishing partners. We’ve been frying fish here in Louisiana our whole lives, and it doesn’t get any better than fresh fish, cold beer and good friends.

Today we’re taking the fresh trout fillets, putting mustard and hot sauce on them, then coating in Zatarain’s fish fry breading.

You can try that or your own recipe, but you can’t do it wrong when the fish is this fresh. In good, hot grease, cook it until it turns golden brown and is nice and crispy on the outside.

I cook it a little longer than most people, so it has that delicious crunch in the crust. I then dust it with some Tony’s seasoning and dig in.
