This simple yet tasty dish is one of my childhood favorites. My grandmother handed this recipe down to my Mama, and she to me. As all cooks do, I’ve added my own touches to it, but the foundation is the same.
Ingredients
- 2 lbs Shrimp- peeled and de-veined
- 6-8 cups Okra – chopped
- ½ cup Guidry’s Creole Seasoning Mix (onions, bell peppers, celery, green onions, parsley, garlic) *You can make your own seasoning mix by chopping your own fresh ingredients in whatever combination you like. I just like the ease of grabbing pre-chopped, pre-mixed fresh from the fridge. It is a great time-saver.
- 4 tbsp Diced Tomatoes
- 2 tbsp Olive Oil
- 2 tbsp Margarine
- 2 cups Cooked Rice
Directions
- In large skillet, heat olive oil and margarine on medium-high.
- Add Guidry’s mix. Sauté.
- Add tomatoes and okra. Lower to medium heat.
- Cook okra for about 15 minutes or until it is your favorite consistency (this is where it will vary, as some people like their okra firm, and others like to smother it down until it has fallen apart) .
- Add shrimp. Continue to cook for 15-20 minutes.
- Serve over cooked rice.
