I love going into my garden to see what the new day’s bounty almost as much as I love to head out on the water in the morning to see what the day’s catch will be. Today it is beautiful spotted seatrout and lovely Swiss chard, yellow squash and onions. This is a quick, beautiful dish that is sure to please.
Ingredients
- 2-pounds Spotted Seatrout Fillets (or fish of choice)
- Olive Oil
- 6-oz. Butter
- 1 bunch Swiss Chard
- 1 med. Onion – diced
- 2 cloves Garlic – minced
- Salt, Pepper, *Cuddin Eddie’s Fais Do Do Dry Seasoning to taste
Directions
Fish
- Rub olive oil on fillets and season
- Place in 8×12 baking dish. Top with pats of butter.
- Bake at 350 for 20-minutes or until golden brown. Set aside.
Swiss Chard
- Sauté onion and garlic
- Add chard and season
- Cook on medium-high until tender
Squash
- 1 lg. yellow squash – cubed
- 1 lg. onion – diced
- 2 tbsp. olive or canola oil
- Season
- Cook on high heat until browned and tender
